2 boneless skinless chicken breasts
1 diced onion
2 cloves garlic, minced
1 (8oz) block cream cheese
1 (14 oz) can cream corn
1 cup frozen corn
1 (14 oz) can fire roasted diced tomatoes
1(15 oz) can black beans, drained/rinsed
1 (7 oz) can green chilies
1 cup chicken stock
1 1/2 tsp cumin
1 tsp smoked paprika
1 tsp chili powder
1/4-1/2 tsp cayenne pepper
1 tsp salt
1/2 tsp pepper
1 cup heavy cream
In a large crockpot, combine all ingredients except the heavy cream
Cook on low for 6 hours or high for 3 to 4 hours
Remove the chicken, shred it, and return to the crockpot
Add heavy cream
Serve (optionally add cheese, tortilla strips, etc.)
