1 lb chicken breast, cubed
1 cup orzo pasta
2 cups chicken broth
1 cup heavy cream
1 cup Parmesan cheese, grated
2 cloves garlic, minced
2 Tbsp olive oil
salt and pepper to taste
Bell pepper, diced (optional)
In a large skillet, heat olive oil over medium heat
Add chicken and season with salt and pepper
Cook through, about 5-7 minutes and set aside
In the same skillet, add garlic and bell pepper (optional) and saute for 1 minute
Add chicken broth and bring to a boil
Stir in orzo, reduce heat, and cover until orzo is tender (10-20 minutes)
Add heavy cream and Parmesan cheese, stirring until creamy
Return chicken to the skillet and serve
