1 lb ground beef
4 slices bacon, cooked and crumbled
1 cup shredded cheddar cheese
1/2 cup breadcrumbs
1/4 cup finely chopped onion
1/4 cup ketchup
1 large egg
2 tbsp Worcestershire sauce
1 tsp garlic powder
1/2 tsp salt
1/4 tsp black pepper
1/2 cup barbecue sauce (optional)
Fresh parsley, chopped (optional)
Preheat oven to 375F
In a large bowl, combine ground beef, crumbled bacon, cheese, breadcrumbs, onion, ketchup, egg, Worcestershire sauce, garlic powder, salt, and pepper. Mix until well combined
Lightly grease a mini muffin tin or line it with paper liners
Scoop meat mixture into the muffin tin until about 3/4 full
Press down and pack mixture
Bake in the preheated oven for 15-20 minutes until cooked through (160F)
If using barbecue sauce, brush a small amount over each meatloaf bit during the last 5 minutes of baking
Allow to cool slightly before removing from muffin tin
Garnish with chopped fresh parsley if desired.
